Introduction

I needed a quick hot lunch so I made this from the ingredients at hand. I liked it enough that I would make it again. The Thai Chili tuna and the figlet add a little sweet and spicy to the dish. Would be good with plain tuna or chicken instead of the Thai Chili flavor, but I'd add some chili powder. I needed a quick hot lunch so I made this from the ingredients at hand. Ingredients

    1/2 cup canned black beans
    1 small onion, halved and sliced
    1/2 tbsp olive oil
    1 3 oz can Thai Chili flavor tuna
    A few shakes of frozen chopped cilantro, or chop up fresh if you have it
    1 tsp chopped ginger
    1 chopped figlet
    1 tsp chopped garlic
    1/2 tsp curry powder

Directions

Cook garlic, onions, and olive oil in a frying pan over medium high heat until onions are translucent. Stir in figlet, beans and tuna. Cook until all are warm. Add ginger, cilantro, curry powder. Give a quick stir and it's done.

Makes about 2 1-cup servings
