    **Requires a large (5qt. min) slow cooker**

    1 tbsp olive oil
    1 skin-on bone-in turkey breast (~1.5 lbs) (for less fat, remove skin and skip step 1)
    2 medium leeks, white part only with a bit of green, cleaned and sliced thin
    2 cloves of garlic, minced
    2 tsp dried thyme
    1/2 tsp cracked black peppercorn
    1 tbsp flour
    1C chicken or turkey stock
    salt to taste (optional)
    1/2C craisins
    2 tbsp finely chopped parsley


1. In a skillet, heat oil over medium-high heat for 30 seconds. Add turkey breast, skin side down, and cook until nicely browned, about 4 minutes. Transfer, skin side up to slow cooker.

2. Reduce heat to medium. Add leeks and cook, stirring, until softened, about 5 minutes. Add garlic, thyme, and peppercorns and cook, stirring, for 1 minute. Add flour and cook, stirring, for 1 minute. Add chicken stock and cook, stirring, until mixture begins to thicken, about 2 minutes. Season to taste with salt (if using). Stir in cranberries.

3. Transfer sauce to slow cooker, covering turkey. Cover and cook on low for 5.5-6 hours, or on high for 2.5-3 hours, until an instant read thermometer inserted into the center of the breast registers 175*F (80*C). To serve, transfer to platter and garnish with parsley.

I have also made this as a skillet meal using turkey breast cutlet. Season the cutlets with pepper and cook in a non-stick pan until brown on both sides and cooked through. Remove and wrap with foil while you cook the sauce (step 2 above). Add cutlets back into saute pan and simmer until sauce thickens (about 5 minutes).
