    1 TBS olive oil
    1 medium onion chopped
    3 cloves minced garlic
    2 cups mushrooms, sliced
    6 chicken breasts, boneless and skinless, seasoned with salt, pepper and garlic salt
    2 cans - 14.5 oz ea. stewed tomatoes, not drained
    ˝ cup cooking Sherry or cooking sautern
    ˝ tsp oregano
    Salt, pepper, thyme and Italian seasoning to taste
    2 bay leaves


Heat up the olive oil in a pan and sauté onion, garlic and mushrooms. Add seasoned chicken and the remaining ingredients except the cooking Sherry. Cover and simmer for 15 minutes.

After 15 minutes add the cooking Sherry and cover again for another 15-20 minutes. Uncover and cook until sauce is reduced to desired consistency and remove bay leaves.

According to my mom, you can put it all in the crock pot for 6 hours on low, including the sherry from the start. To crock pot, the chicken breasts should be frozen. I don’t know if I would sauté the onions, garlic or mushrooms if I’m going to put it in the crock pot. Whatever you think is best.

This is great over whole wheat pasta…angel hair is my favorite with this recipe. Orzo is another idea instead of pasta. Toss a salad and you are good to go.

Remember to also ADD nutritional info for whatever you choose to go with the Italian Chicken recipe. Nutrional info calculated doesn't include pasta, orzo that I mentioned or any side salads you might add to the dinner.
