Introduction

Sweet Potatoes will take the place of oil and butter. To cut down on sugar I've replaced it with light brown sugar you use less to keep the sweetness. Sweet Potatoes will take the place of oil and butter. To cut down on sugar I've replaced it with light brown sugar you use less to keep the sweetness.
Number of Servings: 12

Ingredients

    2 cup White Whole Wheat Flour
    3 tsp Baking Soda
    2 cup Shredded then finely grate Sweet Potato/Yams
    1 tsp Salt
    1 large Egg
    2 cup Skim Milk (reduce milk for thicker pancakes)
    1/4 cup Light Brown Sugar

Directions

1. Heat griddle on low.

2. In a large bowl blend flour, baking soda, salt, egg, and skim milk.

3. Shred sweet potato/yam finely and mix in with other ingredients.

4. Turn up heat on griddle to medium. Then pour pancake batter to 8" in diameter. (small)

5. Cook pancakes approximately 2 minutes on each side or until first side bubbles and second side is golden brown.

Makes 12 (small 8") pancakes
