    Small Red Skin Potatoes (Gourmet)
    Olive Oil Flavored Pam
    3/4 cup of Water


1. Move oven racks to top and bottom shelves of the oven. Preheat oven to 500 degrees

2. Place potatoes on baking sheet with at least a 1/4 inch edge.

3. Pour 3/4 cup of water in baking sheet with potatoes.

4. Cover tightly with aluminum foil, place on bottom oven rack. Bake until knife easily pokes potatoes. About 25 minutes.

5. Remove from oven, Remove Foil. Let cool for 10 minutes. Use paper towel to remove remaining water.

6. Completely cover each potato in Olive Oil Pam

7. Use glass bottom or other flat surface to smash each potato to approximately 1/3 inch thinkness.

8. Spray Olive Oil Pam on each smashed potato and season with thyme, salt and pepper to taste.

9. Place pan with potatoes on top rack and cook for 15 minutes.

10. Transfer potatoes to bottom rack and cook until brown and crispy (approximately 20 to 30 minutes).

11. Serve
