    Roasted eggplants (3 or 4) about 2 lbs
    Roasted Garlic
    Lemon juice


Roast eggplants in oven with skins until soft. ABout 50 mintues at 400 degrees. Let cool on rack. Roast garlic about 15 minutes with skins wrapped in aluminum foil.
Blend all ingredients in a food processor or blende until smooth. Add salt to taste.
