    10 oz bittersweet chocolate (chips)
    3 tblsp butter
    1/2 cup heavy cream
    1 tblsp light corn syrup
    1/8 cup brandy
    8 oz semisweet or bittersweet chocolate (from a bar), chopped fine


Heat 10 oz of chocolate and butter in a glass mixing bowl in microwave for 30 seconds. Remove from microwave, stir, and repeat once. Set aside.

Heat heavy cream and corn syrup on the stove until simmering. Remove from heat and pour over chocolate. Allow to sit for 2 minutes, then stir. Transfer chocolate to an 8x8 inch pan and refrigerate for one hour (add an hour for every doubling of recipe).

Using a melon baller, scoop small amounts of chocolate onto a baking sheet covered in parchment paper. Roll between hands to make smooth chocolate balls. Return to refrigerator for an hour.

Melt 8 oz semisweet chocolate over a double boiler. Once liquidy, roll chocolate balls in the melted chocolate and return to parchment paper. Allow to cool.
