    2-3 cups Fiber One cereal
    1 packet Hidden Valley Ranch dressing mix
    2 eggs
    1/4 cup fat free milk
    2 lbs chicken breasts, bone & skin removed


Crush cereal in a ziploc bag with a rolling pin, leaving some larger pieces for crunch. Add dressing mix to bag. Set aside.

Combine egg and milk and whisk. Pour egg mixture into a shallow dish or pie plate.

Cut chicken into strips, appoximately 1/2-3/4" wide. Dredge each strip into egg mixture, shaking off excess. Drop strips into bag with seasoned cereal. Once all strips are in the bag, seal up and shake until all pieces are completely covered.

Place coated chicken strips on a foil lined baking sheet and bake at 375* for 20-25 minutes.

Makes approximately 12-18 strips, 2-3 strips per serving.

Note: nutrition information includes only a portion of breading & egg mixture, as there is some left over once chicken is coated.
