    1/2 cup light brown sugar
    3/4 cup rolled oats (not quick or instant)
    1 cup flour
    3/4 tsp baking soda
    1/4 tsp baking powder
    1/4 tsp salt
    1 tbsp ground cinnamon
    2 large eggs
    1 egg white
    3/4 cup peanut butter
    1/2 cup mini semisweet chocolate chips


Makes 8 cookies.

1. Preheat oven to 350.
2. Whisk together all ingredients through ground cinnamon. Stir in egg, peanut butter, and chocolate chips.
3. Drop by 1/4 cup onto baking sheet.
4. Flatten cookies out slightly.
5. Bake 10 minutes for chewy cookies, slightly longer for crunchier cookies.
