Great for a quick breakfast. I measure everything. Great for a quick breakfast. I measure everything.

    1/2 tsp olive oil
    1/2 cup kale, chopped remove vein
    2 oz potato, skin on diced (I use very tiny red or yellow potato)
    1 egg
    1 tsp milk
    .2 oz cheddar cheese
    Dash of salt and pepper
    2 homemade corn tortillas


Heat olive oil over medium heat and add chopped kale cook till crispy. That takes a bit to cook, stir occasionally. Remove kale and set aside. Add potato's and let them brown. Whisk egg and milk, add to potato cook till done. Heat up tortillas, add some kale, egg mix and top with the cheese. Salt and pepper to taste.
