Introduction

This is an easy lower-sodium crock pot recipe for pinto beans. I like eating a big bowl of these for lunch. But they probably would make a decent side dish. I originally made a variation of this using a packet of taco seasoning, but it was way too salty. I adjusted by incorporating Sparkpeople's no-salt taco seasoning recipe into this particular recipe. For those who desire a little salt, you can add it to suit their own taste.

I know I'll be making this a lot, and I'll probably experiment from time to time using different salsa's, etc.

I used 2 cups pinto beans for calculating the nutritional information. Wasn't any info for dried beans. I apologize for any miscalculation that might have possibly occurred.

Number of Servings: 5

Ingredients

    1 lb bag of dried pinto beans (soaked in water over night)
    1 16 ounce jar of salsa (I used mild)
    12-16 ounces of water
    1 uncooked diced chicken breast
    3t chili powder
    1t red pepper spice
    1t cumin

Directions

Place all ingredients in a crockpot. Cook on low for 10-12 hours. Stir from time to time if desired.

Makes about (5) 8-ounce servings depending on the amount of water used.
