Introduction

Makes 1 - 9x5 inch loaf or 1 dozen large muffins. Makes 1 - 9x5 inch loaf or 1 dozen large muffins.

Ingredients

    1-1/2 cups all-purpose flour
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt

    3 ripe bananas
    1/3 cup applesauce, unsweetened
    3/4 cup sugar
    2 egg whites (or 1/4 cup Eggbeaters)

Directions

1. FOR LOAF: Preheat oven to 350F. Spray 9x5 inch loaf pan. FOR MUFFINS: preheat oven to 375F. Line 12 muffin cups with muffin papers.

2. In a large bowl, beat together bananas, sugar, egg whites and applesauce. In a separate bowl, combine 1-1/2 cups flour, baking soda, baking powder and salt. Stir the banana mixture into the flour mixture until just moistened.

3. Spoon batter into prepared pan or muffin cups.

4. FOR LOAF: Bake about 60 minutes. FOR MUFFINS: bake 18 - 20 minutes.
