Ingredients

    Water--about two quarts
    Pound of lentil
    Half an onion
    One and a half carrots
    bag of frozen spinach
    6 Tablespoons Parmesan cheese
    1/2 tablespoon olive oil
    Fajita seasoning and salt to taste

Directions

Put all ingredients except spinach and cheese to boil until the lentils are done. Add water as needed. Once done add spinach until heated through. Then serve with 1/2 a tablespoon of Parmesan cheese per serving.
