Ingredients

    2 Tbs extra-virgin olive oil
    1 small onion, diced
    1 1/2 cup of orzo or pearl barley
    1/2 cup white wine
    3 cups of chichen stock
    1 cup vegetables ( I use 1/2 cup corn, 1/2 cup cooked squash cubes
    1/3 cup grated/shredded romano cheese
    2 tsp fresh thyme
    1/4 cup half and half
    2 tsp lemon juice
    salt and pepper to taste


Directions

In a heavy-bottomed medium saucepan, heat the olive oil. Add the onion and saute until fragrant and translucent. Add the fragrant and translucent. Add the orzo or barley and toast ofr 2 minutes, stirring occoaionally. add the wine and cook until absorbed.

Gradually add the stock, stirring frequently. Bring to a simmer and cover; cook for 8 to 10 minutes until the liquid is almost absorbed and the orzo or barley is tender. Remove from heat.

Stir in the vegetables, shredded cheese, thymes, heavy cream, and lemon juice. Season the orzotto with salt and pepper and serve.
