Introduction

Vegetarian burger crumbles mixed with vegetables and brown rice. The veggies may be traded for nearly anything left over in your fridge. Vegetarian burger crumbles mixed with vegetables and brown rice. The veggies may be traded for nearly anything left over in your fridge.
Number of Servings: 4

Ingredients

    1 Tbsp olive oil
    1 medium onion
    2 garlic cloves
    2 stalks broccoli
    1 large carrot
    1 celery stalk
    1 1/3 lbs veggie ground round (or 2 vegetarian burgers, choped)
    1 tsp Tabasco sauce
    1 tsp ground thyme
    1/2 tsp salt
    1/2 tsp cayenne
    pepper to taste
    3 cups cooked long grain brown rice

Directions

Cook rice according to package instructions. Meanwhile, heat olive oil in a large saucepan over medium heat. Add onion, garlic, broccoli, carrots and celery. Cover and cook for 5 minutes. Add veggie ground round and spices. Stir and heat until cooked through, about 5 minutes. Serve veggie mix over rice.

Makes 4 servings.
