Introduction

Taste of Home had a Meatball Sub Casserole recipe in their April/May 2010, but we like to eat healthy and with the original's 650cal - 39gFat - 43gCarb - 29g Pro per serving it was NOT that. So, I altered it to fit our healthier tastes. Please note that the servings are based on the fact that 7 slices of bread fit in my 13x9, and I happened to have 14 meatballs from my 1.3lb of ground turkey. Yours may vary slightly.

Ingredients

    1 red onion, diced very small (processed!)
    1/4 cup plain bread crumbs
    3 tablespoons grated Parmesan cheese
    1 pound ground turkey (1.3 in ours)
    1 loaf (1 pound) Italian bread, cut into 1-cm slices
    1 package (8 ounces) whipped cream cheese
    **Note, fat free cream cheese with reduce Fat and Cals!
    1/2 cup Olive Oil Mayo
    1 teaspoon Italian seasoning
    1/4 teaspoon pepper
    2 cups (8 ounces) shredded part-skim mozzarella cheese
    1 jar (24 ounces) Spaghetti Sauce - Bertolli, Olive Oil, Basil & Garlic
    1 tbsp minced garlic

Directions

(The directions are almost the same, but I changed the way you add the meatballs).

In a bowl, combine the onions, bread crumbs and Parmesan cheese. Add turkey and mix well. Shape into 1-in. balls; place on a greased rack in a shallow baking pan.

Bake at 400 for 15-20 minutes or until no longer pink.
Meanwhile, arrange bread in a single layer in an ungreased 13-in. x 9-in. baking dish (all of the bread might not be used). Combine the cream cheese, mayonnaise, Italian seasoning and pepper; spread over the bread. Sprinkle with 1/2 cup mozzarella.

When meatballs are done arrange them on the bread (2 per if you manage it). Combine the spaghetti sauce, and garlic; pour over cheese mixture; sprinkle with remaining mozzarella. Bake, uncovered, at 350 for 30 minutes or until heated through.
