    1 lb peeled shrimp, raw
    2 tbsp olive oil
    2 tsp bbq rub
    pinch of salt
    16 oz frozen spinach, thawed and drained
    4 oz chunk of cream cheese


Makes 4 servings

In a bowl, toss shrimp with 2 tbsp of olive oil, bbq rub and salt. In a skillet, cook the shrimp until just pink, then add frozen spinach until heated through. Remove from the heat and stir in the 4 oz of cream cheese (easier if cut into chunks).
