Ingredients

    1 tsp olive oil
    1/2 c chopped onion
    1/2 lb fresh pork sausage
    4 egg whites - from Omega 3 eggs
    4 c fresh baby spinach

Directions

Serves 2

Heat oil in non stick skillet over med heat.
Saute onions.
Add sausage, cooking until done.
Add egg whites to mix, scrambling in.
Add greens, reduce heat to low and cover.
Serve when greens are wilted and soft.
