    *365 Organic Quinoa, 1 cup (remove)
    *La Choy Lite Soy Sauce, 1 tbsp (remove)
    Olive Oil, 1.25 tbsp (remove)
    Red Potato, 300 grams (remove)
    Ginger, ground, 1 tsp (remove)
    Onions, raw, .5 medium (2-1/2" dia) (remove)
    Broccoli, frozen, 1 package (10 oz) (remove)
    Cauliflower, frozen, cooked, 1 cup (1" pieces) (remove)
    Green Beans (snap), 1 cup (remove)


1. Cube potatoes and toss in 1/2 Tbsp, EVOO with pepper, and season salt. Spread on cookie sheet and place in 400* oven for 20 minutes.

2. Rinse Quinoa and place in saucepan with 2 cups water. Bring to boil and then reduce heat to medium for 18 minutes stiring every few minutes. Add soy sauce and stir once all water has been absorbed.

3. In saute pan cook onion, brocolli, cauliflower in remaining EVOO until softened 5-8 minutes untl they start to soften. Add green beans and ginger; cook 5 more minutes. (In the winter months I use frozen organic vegetables in most of my meals, I miss fresh Freggies!)

4. Add 2 dashes of soy sauce to vegetables along with cooked potatoes and stir mixture together. Serve ontop of finished soy-flavored Quinoa.

5. This recipe would be perfect with some grilled and diced TOFU as well... I just did not have any on hand..... But if you do you can just add some tofu cooked however you prefer on top!

6. Enjoy! Serves 3-4 Large Servings of protein-packed deliciousness!
