    6 eggs
    1 pkg frozen chopped spinach
    1 med. tomato chopped
    1 clove garlic
    1/2 onion
    salt & pepper to taste


makes 2 seperate 3-egg omelettes.

saute onion and garlic until soft; remove from pan
mix spinach, tomato, garlic and feta, add cooked onion and garlic.
beat eggs and pour into non-stick pan
cook until bottom browns
add some spinach mix
fold egg into omelette shape
remove from pan - garnish with some spinach mix.
