    Turkey breast meat, 24 ounce(s)
    **Mission 96% FF Heart Healthy Tortillas, 8 serving
    *Tillamook Medium Cheddar Cheese, 8 oz
    *Green Chile Enchilada Sauce - Las Palmas - 1/4 cup, 13 serving
    *Safeway refried beans fat free, 2 serving
    *black olives large 5 olives, 2 serving
    Lucerne - Light Sour Cream, 16 tbsp


Spray 13x9x2 w/pam cooking spray.
Pour about 1/2 cup of green enchillada sauce in pan
On each tortilla put 2 Tbsp of beans across center.
Put 3 oz of turkey breast meat across center.
Drizzle enchillada sauce over meat.
Sprinkle with shredded cheddar cheese.
Roll up
After all 8 are rolled, scatter remaining cheddar cheese on top of enchilladas. Slice about 10 large olives and scatter on top of enchilladas. You can also add sliced jalepenos!
Bake at 325 degrees for approximately 30 minutes.
Serve with light sour cream

You can further reduce the fat content by using a low fat or fat free cheese, but I don't eat a lot of cheese and wanted the full flavor or good ole Tillamook Cheese.
