Introduction

Loaded with fiber and flavor without the fat! This is a very quick meal, but can be prepared ahead and kept warm in the crockpot. Loaded with fiber and flavor without the fat! This is a very quick meal, but can be prepared ahead and kept warm in the crockpot.

Ingredients

    1 lb. ground turkey
    1/2 cup chopped onions
    1/2 cup chopped green peppers
    1/2 cup chopped celery
    1 (16 oz..) can lima beans/don't drain
    1 (16 oz.) can kidney beans/don't drain
    1 (16 oz.) can baked beans
    1 (16 oz.) can garbanzo beans/don't drain
    3/4 cup tomato sauce
    2 Tbl. cider vinegar
    1/4 cup packed brown sugar

Directions

Cook turkey in skillet. Add onions, peppers and celery when turkey is almost done. Cook until meat and veggies are done. Pour beans, with the liquid, tomato sauce, vinegar, mustard and brown sugar into soup pot. Add turkey mixture. Simmer on stove for 30-40 minutes. This is really good with cornbread! *You can cut down the sodium by using low-sodium beans and tomato sauce.
