Ingredients

    1/2 an onion, chopped
    4 cloves of garlic, minced
    1 Tbls olive oil
    2 cups chopped collard greens (frozen or fresh)
    1 15 oz can diced tomatoes (not drained)
    1 15 oz can of kidney beans, drained and rinsed
    1 cup cooked wheatberries (barley or wild rice would also work)
    1 1/2 cups chicken or vegetable broth
    1 Tbls chili powder
    salt to taste
    cayenne to taste

Directions

Saute onion and garlic in olive oil until fragrant.

Stir in the remaining ingredients. Bring to a boil then reduce to simmer for 15 minutes.
