Introduction

Ingredients

1 pound (500 grams) lean ground chicken
1 pound (500 grams) lean ground turkey
1 pound (500 grams) lean ground pork
1 bunch green onions washed, cleaned and chopped
1 cup unsweetened applesauce
1 cup breadcrumbs
1-1/2 tsp ground sage
2 tsp fennel seeds (crushed or chopped)
1 tsp black pepper
Directions
Add meats to large mixing bowl.
Add all other ingredients, mixing well with hands for at least 10 minutes to make sure that spices and flavourings are well distributed through the sausage.
Add meat to large Ziplock freezer bag, and refrigerate overnight to allow all flavourings to meld.
Portioning tip: If you slit the ziplock bag on both sides from the zipper, you can easily cut the meat into a 5 x 5 grid, which will give you 25 portions.
Bag them up to freeze in individual portions, or cook them in a non-stick frying pan for about 10 to 15 minutes on medium high.
