Introduction

This is my slimmed down tuna casserole that gives you your pasta "fix" with less calories being involved. And it makes a nice, large (2 cup) serving. A second can of tuna may be added, but is not figured into my slimmed down version here. The mushrooms help give this casserole a very satisfying "meaty" mouth feel.

Perfect meal for meatless Lenten Fridays.

Optional topping of panko (bread) crumbs and parmesan is not included in nutritional values.

Number of Servings: 6

Ingredients

    1 medium head cabbage, shredded (or eq. slaw mix)
    1 6 oz can, tuna
    1 C dried mushrooms, reconstituted, chopped (or fresh)
    1 small onion, diced fine
    1/4 C whole wheat flour
    6 oz whole wheat dried pasta (your choice of shape)
    3 C skim milk
    2 TBSP olive oil
    1 Knorr fish stock cube (or vegetable cube)

Directions

Pre heat oven to 375.

1) Boil pasta following box directions, pull & drain before fully cooked.
2) Saute cabbage, onion, and mushrooms in the olive oil, using a large frying pan, until cabbage is limp.
3) Sprinkle flour over cabbage mixture in pan and stir well.
4) Add skim milk and stock cube (break it up), stir, over medium heat, until it starts to boil and is thickened.
5) Crumble Tuna into frying pan and mix well.
6) Add cooked pasta and mix well.
7) Place mixture into a (oil sprayed) 2 QT casserole dish.

8) Place casserole in pre-heated oven and bake for 30-40 minutes (or until browned and thoroughly warmed).

Recipe makes 6 (2 cup) servings at 267 calories per
