    Ore Ida Country style Hash Browns, frozen, 2.5 cup (remove)
    Green Peppers (bell peppers), 0.25 cup, chopped (remove)
    *Peppers, hot chili, red, fresh, 1 pepper (remove)
    Onions, raw, .25 large (remove)
    Mustard seed, yellow, .5 tsp (remove)
    Olive Oil, 1 tbsp (remove)


In a wide pan, heat olive oil, pop mustard seeds, add red hot chile pepper pieces, followed by onion slices and thin pepper slices. Stir fry for 30 seconds, spread the hash browns over and cover tight cooking on low to medium flame for a couple of minutes. Sprinkle salt with a shaker, cover and cook until done another 2 minutes. Turn over in small sections and brown the other side until golden. Serve hot.

Variations: you can use cumin seeds instead of mustard seeds. Sprinkle curry powder (garam masala, chat masala or rasam/sambhar powder) if you like, cilantro fresh chopped and lemon juice. The same can be prepared with french fried potatoes.

    I left out the hot peppers since young kids were eating. But I look forward to making these again when we can add the extra kick.
