    3/4 cup skim milk
    1/4 cup olive oil
    1 egg
    1 cup oatmeal
    1 cup whole wheat flour
    3 tsp baking powder
    1/2 tsp salt
    1 cup frozen, unthawed blueberries


Preheat oven to 400 degrees.. In large bowl, beat together wet ingredients until well blended Stir in dry ingredients-batter will be lumpy. Fold in blueberries and walnuts Spray mini muffin pan and spoon one tablespoon into each. Bake 18-20 min. until brown. Remove from pan immediately.
