Introduction

Ingredients

    1 cup onion, chopped
    1 10 oz. package frozen spinach, thawed and squeezed dry
    1 1/2 cups tomatoes, seeded and chopped
    14 egg whites
    2 whole eggs
    2 cups fat free milk
    1/2 cup swiss cheese
    3/4 tsp. basil
    3/4 tsp. thyme
    1/2 tsp. oregano
    3/4 tsp. salt
    1/2 tsp. balck pepper
    4 slices whol wheat bread, cubed

Directions

Spray a 9x13 baking pan with non stick spray, set aside. lay cubed bread in dish. top bread with tomatoes, onion, spinach and cheese. Whisk eggs, egg whites, milk, and spices in a large bowl. Poue egg mixture over bread and veggies in pan. Mix slightly. Bake in a preheated 350* oven 45-50 minutes or until a toothpick poked in the middle comes out clean.
