Introduction

Ingredients

2 small sweet potatoes peeled and chopped into bite sized pieces
8 oz butternut squash, peeled and chopped into bite sized pieces
1 small onion chopped
1 lg clove garlic minced
1 jalapeno minced
1 1/2 tsp cumin
1/4 tsp turmeric
1/4 tsp ground ginger
1/8 tsp ground coriander
1/8 tsp ground cinnamon
1/4 tsp salt
1 1/2 cups water heated
1 can drained rinsed chickpeas
1 can drained rinsed roasted tomatoes
1/4 cup natural peanut butter
Cilantro for garnish
Directions
heat the water first and have ready.
In the crock pot put the chopped onions, minced garlic and jalapeno, cubed up sweet potato and squash, chickpeas, tomatoes , peanut butter and all the spices.
Cover with the water.
Cook on medium, if you have that setting for 4-6 hours. (My crockpot only has low and high. I used the high setting for 4 hours.)
Serve with chopped fresh cilantro as garnish
