Introduction

Ingredients

    3 large eggs
    3/4 cup liquid egg whites (or 3 egg whites)
    1/4 cup low fat evaporated milk
    1/4 cup onions, chopped
    1 package frozen spinach, thawed and drained
    1/2 cup roasted red peppers, diced
    1/2 cup shredded cheddar cheese

Directions

Preheat oven to 350°. Whisk eggs, egg whites and milk with whatever spices you choose. Add the remaining ingredients and mix well. Pour into mini loaf pan or muffin tin that has been prepared with cooking spray. Bake for about 20 minutes, or until a knife insert in the center comes out clean. Makes 8 mini loafs or 12 muffins. 1 mini loaf = 66 calories; 1 muffin = 44 calories.
