Introduction

Ingredients

    6 corn tortillas
    1 medium onion, diced
    1 pasilla or Anaheim chile, seeded and chopped
    1 jalapeņo pepper, seeded and chopped
    4 large eggs
    1/2 cup egg substitute
    1/2 cup 2% milk
    3 oz. low-fat ham or turkey ham
    1 oz. Monterey Jack cheese, shredded
    pinch of salt
    cooking spray

Directions

Preheat oven to 350°. Coat an 8x8" baking pan with cooking spray.

Coat a non-stick skillet with cooking spray and saute the onion, chiles, and ham together until the onion and peppers are softened.

Whisk together eggs, egg substitute, milk, and a pinch of salt.

Heat the tortillas enough to be flexible (microwave for 30 seconds should do it). Overlap 4 tortillas in clover shape to cover sides and corners of baking dish. Place 1 tortilla centered in the bottom of the dish. Add onion, pepper and ham mixture to baking dish and spread evenly. Sprinkle shredded cheese over that mixture. Carefully pour egg and milk mixture over all. Place in oven and bake for 25-30 minutes until completely set. Slice into 4 pieces and serve with fresh fruit on the side. Serves 4
