Ingredients

    1 cups lentils
    4 cups vegetable broth
    4 cups water
    3 Tbs. olive oil
    4 large carrots, sliced
    1 large onion, diced
    3/4 tsp. salt
    1/4 tsp. ground black pepper
    3 cloves garlic, minced
    1 tsp. ground cumin
    1 cups cooked wheat berries
    8 cups coarsely chopped spinach
    3 Tbs. lime juice

Directions

In a large stock pot combine lentils, broth, and water and bring to a boil over high heat. Then reduce heat, cover and simmer gently until lentils are lender but not mushy, about 25 to 30 minutes.

Heat oil in a large skillet over medium heat. Add carrots, onion, salt and pepper. Cook, stirring occasionally, until vegetables start to brown, about 10 minutes. Add garlic and cumin and cook for an additional 30 seconds, stirring constantly. Remove from heat.

When lentils are tender, stir cooked wheat berries and spinach into the pot. Simmer for about 5 minutes, stir in vegetables and lime juice.
