    2 tb evoo
    1 cup onions, diced
    2 cloves garlic, minced
    1 green pepper, diced
    1 red pepper, diced
    1/2 block soft tofu, cubed small
    15 oz can of diced tomatoes
    15 oz can tomato sauce
    15 oz can of water
    15 oz can dark red kidney beans
    4 dashes of Franks Red Hot
    Cumin and Chili Powder to taste


Saute onions, garlic and peppers in oil. Add tofu after peppers start to soften and cook for 5 minutes. Add all remaining ingredients except beans and simmer for 30 minutes. Add beans and cook for 10 minutes. Serves 6, 194 calories per serving.
