Introduction

With cinnamon, nutmeg, and walnuts. Yum! With cinnamon, nutmeg, and walnuts. Yum!

Ingredients

    2 cups butternut squash, steamed and pureed
    1 cup whole wheat flour
    2 eggs
    1 tsp baking powder
    .5 tsp cinnamon
    .5 tsp nutmeg
    1 tsp vanilla extract
    1 tsp brown sugar
    4 tsp granulated sugar
    .25 cup chopped walnuts

    Butter for cooking.

Directions

Steam and puree the squash. Let cool.

Sift dry ingredients together.

Add vanilla extract and eggs to squash puree.

Add dry ingredients and stir until just mixed.

Add walnuts, if desired.

Fry in butter! Makes approximately ten 3-inch pancakes. Delish!
