    1 lb ground beef
    1 medium onion chopped
    4 oz tomato sauce
    1 egg, whisked
    1 sleeve of saltine crackers, crushed
    1 tsp salt
    1 tsp black pepper
    2 tsp Italian seasoning


Mix all ingredients together, with enough tomato sauce to hold all ingredients together.
Spray Pam on glass pie plate.
Make ring of meat loaf mixture in plate, with 2" hole in center.
Cook on high in microwave for 9 minutes
Then cook on medium in microwave for 11-14 minutes, until all pink gone in meat.
Pour tomato sauce on top of ring of meatloaf, then cook additional 2 minutes on high in microwave.
Leave in microwave for an additional 5 minutes, or remove and tent with aluminum foil for 5 minutes.
Cut up & serve.
Makes 8 servings.
