Introduction

Great, "healthier" cookies, lower in gluten and higher in protein. Great, "healthier" cookies, lower in gluten and higher in protein.
Number of Servings: 48

Ingredients

    2 Cups brown rice flour
    1.5 Cups Amaranth flour
    1/4 tsp baking soda
    1 tsp baking powder
    4 eggs
    1 Cup brown sugar
    1/2 Cup coconut oil
    1/2 Cup apple sauce
    1 tbsp vanilla
    1 Cup Semi sweet chocolate chips

Directions

Mix all wet ingredients, mix well (melt coconut oil and mix well with sugar, first). Mix dry ingredients, blend well, and mix with wet. Add chocolate chips. Drop onto cookie sheet 1 inch drops. Bake at 350 8-10 minutes.
