    1/2 cup margarine
    1 cup brown sugar or 1/2 cup each white and brown sugar (I usually do the 1/2 each)
    2 eggs
    2 cups flour
    1 teaspoon cinnamon
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/4 teaspoon allspice
    1/4 teaspoon nutmeg
    1 cup mashed banana, very ripe (about two bananas per loaf)
    1 tablespoon liquid (sour milk, buttermilk, or fruit juice) (I usually use orange juice or
    lemon juice but anything will work)


Cream margarine and sugar; add eggs and beat well. Sift dry ingredients together; add to egg mixture with banana and liquid; mix thoroughly. Bake in greased or wax-paper-lined loaf pan for 1 hour at 350 degrees. Cool on cake rack.
(I always line mine with wax-paper it give the crust a different texture)
