Ingredients

    2 chicken breasts
    4 chicken thighs
    taco seasoning
    3 c. brown rice, cooked (1.5 cups raw)
    1 can tomato soup
    1 tsp olive oil
    1 small or 1/2 large red onion, chopped
    1 can corn
    1 can black beans
    1 jar of salsa

Directions

6 large servings or 8 medium servings.

1. Bake the chicken, dusted with taco seasoning. Chop.
2. Cook the rice w/ part tomato soup, part water.
3. In a skillet, soften onion in olive oil.
4. Add corn, black beans, salsa and the remainder of the taco seasoning. Simmer until corn and black beans are heated through.
5. Add the cooked rice and chicken. Mix it up and simmer until heated through.

**Garnish with ff sour cream and cheddar. Not included in calorie calculations.
