Ingredients

    1.5 pounds pork tenderloin
    1 T chili powder
    1/2 tsp red pepper flakes
    3 cloves garlic, minced
    1 cup low-sod chicken broth
    1 cup no salt added diced tomatoes
    6 - 8 cups (2 bunches) kale
    2 cans cannellini beans, drained and rinsed
    1/2 cup pepitas

Directions

Spice rub - sit 1 hour to overnight.
Cook pork with garlic and broth, 5 hours on low.
Break up meat. Add tomatoes, beans. Place greens on top to steam. Cook one additional hour. Serve with pepitas garnish.
