Ingredients

    1 Tbsp Extra-virgin olive oil
    1 onion, diced
    4-5 cloves minced raw garlic
    1 whole head garlic, roasted for 15 minutes at 450F
    2 bay leaves
    3 Tbsp Crushed red pepper
    2 medium potatoes, cut in half lengthwise, cut into ¼” slices
    ½ tsp liquid smoke (hickory or apple)
    2 TBSP vegetable base
    6 cups water (will fill stockpot up to the 2 QT line)
    2 cups savoy cabbage leaves, sliced
    2 cups kale leaves, big stems removed, then sliced

    Note, if you do not have vegetable base, you can leave it out and use 6 cups of vegetable (or chicken) broth instead of the 6 cups of water.

Directions

Get head of garlic roasting in the oven for 15 minutes at 450F.

Heat olive oil over low heat. Add onions and cook until translucent. Add raw garlic, bay leaves, and red pepper, and cook 1 min more.

Add the water, liquid smoke, vegetable base, and potatoes, and bring to a simmer. Simmer 10 minutes.

Add the cabbage and kale. Cook 10 minutes more.

Taste for salt and pepper. Remove bay leaves, and serve.
