    1 15oz box bran flakes
    5 cups whole wheat flour
    1.5 cups sugar (or sucanat)
    1.5 cups honey
    5 tsp baking soda
    2 tsp salt
    2 eggs + 4 egg whites
    4 cups nonfat buttermilk (minus 1/4 c and 1/8 cup due to the honey)
    .5 cup canola oil


Combine first 5 ingredients in a large bowl. Mix in rest of liquid ingredients. Bake 375 12-15 min. Can store in refrigerator for up to 6 weeks.

Notes: I used 4 tbsp vinegar then measured up to the 4 cup line with the skim milk for the buttermilk. I removed 1/4 cup and 1/8 cup of the milk to account for the liquid nature of the honey. Original recipe calls for 3 cups of sugar, 4 eggs, and 1 cup of oil. I have tried to make this version much healthier.
