Light and fresh Quinoa Light and fresh Quinoa
Number of Servings: 4


    2 cups Kirkland Organic Chicken stock
    1 cup of Quinoa (lightly toasted)
    1/2 cup diced onion
    3 cloves of thinly sliced garlic
    1/4 cup diced red pepper
    2 TBS olive oil
    1/2 tsp crushed red pepper
    2 tsp kosher salt (to taste)
    1/2 lemon, juiced
    2 cups fresh baby spinach leaves
    2 cups sliced summer squash


Cook Quinoa in 2 cups of Chicken Stock (instead of water) per package directions
Saute 1/2 onion, garlic, and 1/4 cup red pepper in 2 TBS of olive oil. Add cracked black pepper, kosher salt, and 1/2 tsp crushed red peppers.
Add 2 cups of summer squash, thinly sliced
When soft, add cooked Quinoa
Top with 2 cups of spinach leaves. Top with a little chicken stock and 1/2 of a lemon, juiced. Cover until Spinach is wilted.
Stir in spinach. Add 3 oz of Feta cheese. Serve immediately.
