    1 pound skinless, boneless chicken breast cut into bite size
    2 Cups corn
    2 Cups water
    One (15 1/2 ounce) can black beans drained and rinsed
    1 1/2 Cups instant rice uncooked
    1 1/2 cup salsa
    1 teaspoon chili power
    1 teaspoon ground cumin
    1 Cup Cheddar cheese


Cook chicken over medium heat until lightly brown,

Stir in the corn, water, beans, rice, salsa, chili powder, and cumin and bring to a boil

Reduce the heat and simmer, covered, until the rice is tender, about 15 minutes

Stir in the cheese until melted s

Serve 9

To make spicier use spicier salsa
Also a dab of no fat sour cream is good to go along
