Ingredients

    1 cup quinoa, dry, rinsed
    2 cups vegetable broth (or just water)
    1/2 cup chopped sun dried tomatoes (not packed in oil)
    2 cups frozen chopped spinach
    2 oz soft goat cheese
    Juice of 1 lemon
    1 can great northern beans, drained and rinsed

Directions

In a medium saucepan, bring broth (or water) to a boil, add quinoa, reduce to simmer. Stir in frozen spinach and tomatoes if they need to rehydrate. Cover and let simmer until quinoa is cooked, ~25 minutes.

Once quinoa is cooked, stir in lemon juice and beans. Give a healthy shake of salt and pepper. Heat through.

Just before serving, stir in pieced goat cheese.
