These were a hit at a family gathering. These were a hit at a family gathering.
Number of Servings: 12


    2 Chicken Breasts (shredded)
    Taco Seasoning
    1 Cup Black Beans
    1 Cup Corn
    Black Olives (chopped)
    2 Cups Shredded Cheese (I used 1.5C Fat Free Mozzarella and 1/2C Mixed Cheese blend)
    1 Can (28oz) Enchilada Sauce (red)
    12 Carb Balance Wheat Tortillas (Fajita size)


Preheat oven to 350 degrees
1. Cook Chicken Breasts in skillet until cooked through
2. Remove from pan and shred chicken with fork; return to skillet
3. Add taco seasoning (I only used 2 tsp of a packet), mix with shredded chicken
4. In a bowl, combine beans, corn, olives and chicken, mix well
5. Warm tortillas in microwave
6. Fill each tortilla with chicken filling, then place seams down in dish (9X13)
7. Pour Enchilada sauce over the dish, make sure to get the sauce in between the enchiladas as well
8. Sprinkle cheese over enchiladas
9. Bake at 350 Degrees for 30 minutes (may vary by oven)
Dish up and enjoy
*I served with Fat Free Sour Cream (not included in calc)
