Ingredients

10 oz spinach
6 slices bacon, cooked and chopped chopped
2 tbsp extra-virgin olive oil
1 red onion, minced
2 garlic cloves, minced
1 tsp sugar
1/2 tsp salt
1/2 tsp pepper
6 tbsp cider vinegar
3 hard boiled eggs, peeled and chopped
Directions
Place spinach in a large bowl.
Save 4 tbsp of bacon grease after the bacon is cooked. Add the extra virgin olive oil and heat until shimmering.
Add the onion, garlic, sugar, salt and pepper. Cook until onion is soft (about 3 minutes).
Take off heat and mix with vinegar and pour immediately over the spinach. Toss to wilt.
Portion onto plates and garnish with bacon and eggs.
