    4 large eggs (or 1 cup egg substitute)
    pinch of nutmeg
    salt and pepper to taste
    1 bunch spinach, wilted
    1 oz roasted red peppers, drained & chopped
    10 grams sundried tomatoes (packed in oil), drained and chopped
    2 oz feta cheese, crumbled
    2 tablespoons minced onion
    1/2 cup broccoli, cooked and cut into small chunks


Preheat ove to 350F.

Beat eggs with spices. Stir in all other ingredients.

Lightly spray or oil 4 cups in a muffin tin.

Divide egg mixture among the 4 cups. Bake for about 15 minutes or until cooked through.
