Ingredients

1.5 teaspoons olive oil (divided)
6.7 ounces super firm tofu, water packed, rinsed
1.5 tablespoons nutritional yeast flakes
1.5 cups fresh spinach
2.0 each fresh mushrooms
0.5 each onion, sliced (small)
1.0 each garlic, clove, crushed
2.0 teaspoons tamari (soy) sauce, organic
To taste white pepper, ground
Other veggies work well, too (e.g. broccoli, green and red bell peppers, snow peas, etc.)
Directions
Makes 1 very hearty serving
1. Heat non-stick skillet (med high).
2. Add just enough olive oil to lightly coat skillet.
3. Break tofu into small pieces and add to hot skillet.
4. Cook until tofu releases water to desired consistency and turns a light golden brown.
5. Add nutritional yeast and minced onion. Stir to coat tofu.
6. Add drizzle of olive oil followed by garlic, sliced onions, and mushrooms. Cook until tender.
7. Add spinach and cook until wilted.
8. Stir in tamari (soy) sauce and sprinkle with ground white pepper, to taste.
9. Remove from heat and enjoy!
