    1 Spaghetti Squash 2 1/2 - 3 pounds
    1 C chopped carrots
    1/2 C chopped celery
    1 Medium onion
    3 cloves garlic
    1 C chopped broccoli
    1 C chopped tomatoes
    1 C black beans
    2 C tomato sauce (You may use less, to taste)
    4 T Parmesan/Romano grated cheese
    1 T Oregano
    1 T Basil
    1 t salt
    1/2 t black pepper


1. Preheat oven 350 f
2. Cut Squash in half lengthwise, discard seeds.
3. Place cut down down in a shallow baking dish, add just enough vegetable broth to cover bottom of dish.
4. Bake about 45 min, or until tender.
5. While squash cooks, chop all vegetables.
6. Heat 1/2 C vegetable broth in medium skillet, add in carrots, celery, onion, garlic and simmer about 10 min or until barely tender. Remove from heat, stir in broccoli, tomatoes and black beans.
7. When squash is done peel out inside strands with fork and transfer to casserole dish.
8. Add tomato sauce on top of squash, then add remaining vegetables and spices, mix well.
9. Top with grated Parm cheese.
9. Bake at 350 f for 30 min.
