Introduction

Ingredients

    1 cup Quinoa
    2 cups low sodium Chicken Broth
    1 medium Onion chopped
    1/4 cup chopped Sweet Red Pepper
    3 cloves Garlic chopped
    1 Tbs EVOO
    Pinch Red Pepper Flakes
    1 tsp Italian Seasoning
    1/2 Tbs unsalted butter
    1 Tbs Parmesan
    1 medium Mushroom



Directions

Soften onion, red pepper and garlic in oil. Add red pepper flake, Italian seasoning, and bay leaf. Add quinoa. Toast slightly. Add broth. Simmer until quinoa has absorbed the majority of the liquid. Add mushroom, Parmesan, butter. Fluff and serve when mushrooms have reached desired constancy. 8 side dish servings.
